Cauliflower Rice?

Art's goal for me in the past few months has been to reduce my glucose levels. On one of our grocery shopping trips to Sam's Club, he noticed Riced Cauliflower.

"Since you're avoiding rice to reduce your carb levels, I'll bet this will help," he said.

Hmmmm.... I was not thrilled with the idea but he put it in our cart.

And he made it a point to serve it to me at dinner that night. 😏


Riced cauliflower is merely chopped up cauliflower that looks sorta kinda like rice. But you know what? Since I've lost a lot of my ability to taste much, it wasn't bad at all. In fact, Art is now starting to eat it too. 

Mom? Nope. Rice is rice to her. She says she's 92 and will eat rice. And that is that.

  1. We make and eat quite a bit of cauliflower rice at home. I quite enjoy it though freely admit it isn't the same as jasmine rice.

  2. It is not exactly the same, but if you doctor it up or use it to make fried rice it is not bad. I use it for a lot of things. It is great to use in smoothies. I think you could probably substitute it anywhere rice would be used.

  3. I do use it but admit it is pretty blah. I add Lemon Curd to it and it jazzes it up a lot. I also use that on my veggies. Of course I am a lemon curd fan. Can eat it plain out of the jar.

    1. I don't think I've ever seen lemon curds at the market. Now I'll keep my eyes focused for them.

  4. Cauliflower really helps my diabetic husband's diet. It is his rice. Your mom should eat whatever she wants at her age.

    1. I'm actually getting very used to it. It helps that I've lost most of my sense of taste so I can sort of pretend it's rice or potatoes or whatever.

  6. Something ESPish is going on here, because I dreamt last night I was trying to make cauliflower buns for hamburgers. I'm not kidding! Well, now I'm hungry for Jasmine rice and lemon curd thanks to Ed and Patti, but good for you and Art, Kay. And good for your mom too. 😉👍♥️

  10. We eat very little rice, so I guess I'll just keep on eating my cauliflower as a vegetable. Interesting, though. Cauliflower seems to be being used in many ways now as a starch substitute.

  11. I have some good recipes for cauliflower rice, which we love. If you don’t think of it as rice, it helps! It’s good with just salt, pepper, and a bit of butter.

  14. The closest I've come is having had a cauliflower crust on pizza once. It was great! :-)

  15. I made a recipe of tahini dip using cauliflower. It came out delicious and you can use carbs or veggies for the dipping.

  18. I don't care for rice any way. And it contains some unhealthy stuff...in fact..it contains arsenic...which is never healthy.

  20. We enjoy cauliflower rice, it's so low in carbs.
    As you know husband Eddie is a type 2 diabetic, it helps keep his blood sugars healthy.
