Our neighbor just had a friend come to visit from the outer islands who brought with him lots of veggies and fruits. He shared some of the bounty with us.
We could figure out the limes, lichees and eggplants but the bitter melon is something we don't usually cook. We finally figured out the last veggie (round, brown root) which must be jicamas. (Our neighbor called it Chinese taro.) I remember my Venezuelan friend, Daisy making us a salad with jicama. It had a sort of water chestnut consistency and flavor. I'm going to use it tonight in a salad to serve my brother, nephews and niece-in-law. This will be interesting.
Now... those bitter melons.... hmmmmm.....
