Corn Chowder With Spinach?

I've been accused of throwing everything except the kitchen sink into my soups.  I guess it's true.  Sometimes, my soups end up completely different from what I thought I was making.

Our kids used to worry (a little) when I would take out my soup pot because I would keep adding to it until we had enough to last us for several endless days.


Here I was making corn chowder.  Well, I happened to have half a bundle of fresh spinach so I threw it in.  I've been adding a cup of quinoa to all my soups and stews now.

I must tell you that mom and Art liked it.  They said they enjoyed the spinach in the corn chowder.  It was different... and tasty.

I wonder if I should make the kids a pot when they visit this summer...  Hmmm...

  2. Since I don't use a recipe to make soup it's NEVER the same. (Sometimes I wish I knew what I added so I could replicate it later.)

  4. My soups are always a surprise, too! Usually they are great, but I could never give the recipe because it completely depends on what's at hand. I've been adding frozen bits of kale (from my garden) to everything lately, even to mashed potatoes. Your soup sounds delicious and the spinach gives it a bit of contrasting color.

  7. I don't make soup very often but I love corn chowder and I think it sounds good with the spinach. I guess I could add some spinach to my canned corn chowder. :)

  10. My soups end up that way too, with whatever I happen to have around in them. Most of the time they work, occasionally they don't. I do enjoy making them though.

  13. I finally bought and cooked quinoa last week. I made a pilaf to go with roasted chicken. We decided it was overrated. Superfood maybe, but also an endangered food source for the folks who used to count on it for their main source of nutrition.

  14. I'm not too sure what corn chowder is, but it certainly looks good. I make soup with whatever is on hand and it usually works out well. If I'm not sure that it will be really tasty I add a spoonful of curry paste and that makes all the difference. Like Linda above, I've not been too keen on quinoa, but it might work well in soup;
