Pumpkin Pancake Problem

I bought the wrong size pumpkin can for Thanksgiving so there was quite a bit of pumpkin left over.  I remembered Linda Reeder of Linda Letters doing a post about making some pumpkin apple pancakes and mentioned it to Art.  Here's the link that Linda gave for the recipe.

Art got up early and decided to give it a try.

First he gathered all the ingredients.



Looks like he chopped up my yummy and crunchy Fuji apple.

Here's the lovely batter.   Only one little problem.  He was probably rushing and made this little mistake.  He mixed up the salt for the sugar.  He knew it as soon as he dropped the salt in.  It calls for 1 Tablespoon sugar and 1/4 teaspoon salt.  He tried to take out as much of the salt as he could but it was still not very good.


The finished product looked wonderful but the heavy salt made it rather inedible.

Not to worry.  I'm sure he'll try again on another day.

So we had cold cereal which was also a nice breakfast.
