Pumpkin Pancake Problem

I bought the wrong size pumpkin can for Thanksgiving so there was quite a bit of pumpkin left over.  I remembered Linda Reeder of Linda Letters doing a post about making some pumpkin apple pancakes and mentioned it to Art.  Here's the link that Linda gave for the recipe.

Art got up early and decided to give it a try.

First he gathered all the ingredients.



Looks like he chopped up my yummy and crunchy Fuji apple.

Here's the lovely batter.   Only one little problem.  He was probably rushing and made this little mistake.  He mixed up the salt for the sugar.  He knew it as soon as he dropped the salt in.  It calls for 1 Tablespoon sugar and 1/4 teaspoon salt.  He tried to take out as much of the salt as he could but it was still not very good.


The finished product looked wonderful but the heavy salt made it rather inedible.

Not to worry.  I'm sure he'll try again on another day.

So we had cold cereal which was also a nice breakfast.

  2. Best laid plans;). I remember once mixing the ingredients for soy sauce. I used about a cup and it should have been a third. That first bite was something else!!!

  4. That recipe DOES sound like a winner.....yummmm that apple/pumpkin combo. Cute picture of Art. Don't feel badly Art.... we've all over-salted. Kay.... what a vibrant header picture. Lights up my life.

  6. Oh dear, I had to laugh at Art's mistake. What a shame. Adding a potato to soup or stew that's too salty works but you can't really do that with pancakes - oh, wait, potato pancakes!

  9. Drats. Art needs coffee first. Let's see, with the salt, the pancakes are self-preserved. Could slice and bake them for pumpkin vs. potato chips! (I flopped some biscuits one time I'd made for my Dad. That's when I learned that the baking powder REALLY does have an expiration date on the bottom of the can...DrumMajor

  11. Pumpkin puree is very good for you so try it again and try pumpkin in other recipes too. You can reduce the amount of liquid and/or oil in your recipe if you use pumpkin. Dianne
