October 28th, Monday was another wonderful start to the week.
KC insisted her teacher wanted the bird's nest that was long vacated on the gingko tree in front of the house. Her teacher did indeed have a project giving her first grade class the experience of working in teams to create a bird's nest.
We saw this in the classroom a few days later.
Lunch was with Bill and Sandra at the Walker Brothers Pancake House. Sandra is an ordained minister and Bill was once a seminarian and now an anthropology professor. And yet they both know more about Buddhism than we do. Bill has been a dear friend since our children were KC's age. Sandra and I have so many health issues in common that it was wonderful to compare notes.
In the afternoon, we roasted the pumpkin seeds. I did the less healthy version with butter and salt. Art chose to make his tray with olive oil, oregano and I forget what else. At first I wasn't that crazy about it, but eventually I got hooked and couldn't stop eating them. I'll definitely make it again next year. Do you have a good recipe for pumpkin seeds?

Made pumpkin seeds so long ago, I have forgotten. I was just a child.
ReplyDeleteOh my gosh my boss made roasted pumpkin seeds a couple of weeks ago and I loved them. That was the first time I'd ever had them.

Haven't done pumpkin seeds for years and years-too much work. But my favorite whole wheat bread has them in plus sunflower, and other seeds. Love the crunch...lol!

I'm always amazed to see how birds can create their own nest out of almost anything.

Glad you didn't have to climb a tree to get the nest. From looking at the display book, I didn't realize big, mean ostrishes made nests.

will you share your recipe and timing for pumpkin seeds? I tried once and don't think I got it right.
ReplyDeleteIt's been almost a month since I did it so I have to tell you my brain is very forgetful. I'd looked up recipes online and found what I thought was workable. I just looked again and this one seems close to what I did.

I did try to remove all the pulp by washing it in water with a little salt. That was a bit of a bother, but not too horrible.
Then I sloshed it around in a little melter butter and salt and spread it on the baking sheet to roast at around 320 degrees for about a half hour to 45 minutes. You have to watch it carefully until you get the golden brown color. I was surprised at how many different instructions there were on the web. One said only 10 minutes. I know that's not going to dry it out enough.
My parrots like pumpkin seeds…I don't. maybe I haven't eaten enough. Dianne
ReplyDeleteI always get put off keeping the seeds by the yucky mess they're surrounded by. How did you get rid of that?
ReplyDeleteI talked about pumpkin seeds, but Dick was too late to get a pumpkin. I did try cooking butternut squash with the seeds still in it, to see if the seeds tasted like toasted pumpkin seeds, but they didn't. Lindy liked the stringy bits with the seeds, but she was dropping seeds out from between her teeth all day.

Haven't ever tried roasting pumpkin seeds yet. Now I think I will next chance I get. Makes sense not to throw away good food.

ReplyDeleteWe always roast a pan full each Halloween. I use olive oil and salt, and I discovered that they are better if you don'r clean them too carefully!
