I've often shown how I like to serve grilled vegetables at our family pot lucks. I learned how to do this when we were visiting friends, Chris and Lorraine in Ohio.
All you do is wash and slice whatever veggies you like. I often use red peppers, asparagus, zucchini, sweet onions, mushrooms and broccoli. I marinate it in olive oil with Italian seasoning for about an hour.
I then broil it on the top rack of my oven.
After it's done, I often sprinkle it with a little Parmesan cheese.
Something about the high heat is supposed to sweeten the flavor of the veggies and it really does.
This is yummy and healthy. I highly recommend this!

Looks wonderful! I'll try that.
ReplyDeleteSounds and looks good. Thanks.
ReplyDeleteI was looking for something to take to a birthday dinner this weekend, a side dish that is healthy...this is perfect. Thank you!

Yummy! I love to grill or oven grill veggies. I often do asparagus with red pepper slices with jalapeno salt or onion powder! Ummmm, I'm hungry.
ReplyDeleteWhen people talk of grilled veggies I jump up. The way you have been doing would make the even crispy and tastier. Thank you.
ReplyDeleteJohn and I love grilled veggies too! I usually make a small aluminum foil boat, add the veggies, spray with a little olive oil, sea salt and ground black pepper and place on the grill. They are so good!
ReplyDeleteThanks for the tip. I shall try this. I'm not a vegetable lover so I can use all the help I can get.
ReplyDeleteLooks scrumptious. You eat such healthy food. Dianne
ReplyDeleteWe do a lot of veggies that way. Tonight asparagus. :)
ReplyDeleteI love grilled veggies, too. And another favorite: potatoes and butternut squash cut into chunks, sprinkled with a little olive oil and seasoning, and baked. Yummy.
ReplyDeleteAsparagus? :)
ReplyDeletehahahahahahah, yummy, but what do you do with the odd smell of #1 after you've had a lot of asparagus?
We do something similar as yours, except we're too lazy to get all those separate veggies and prep them; we just get the medley at costco (frozen large bag of baby carrots, broccoli, cauliflower, zuccini and squash all cut up and mixed), then just throw them in a pan with tons of garlic and olive oil. No asparagus in those frozen medlies, though, I suspect too expensive.
never thought of using italian dressing with it, will have to remember to try that.

yes!!! looks yummy.
ReplyDeleteI will try grilling my veggies next time. I roast them also. Thanks for this Kay, and those veggies do look yummy.
ReplyDeleteMy daughter does something very similar on the outdoor grill. It leaves toasted marks, but I like that. For some reason, the process makes the vegetables less bland in taste and more delicious.
ReplyDeletesounds so good and healthy-we just went out to lunch at Smashburger and I feel guilty...lol!
ReplyDeleteThat looks very good and simple.
ReplyDeleteThat's IT? I do need to eat more veggies (our entire family does actually) so I should try this...
ReplyDeleteso good, we do this all the time, my husband was diagnosed with high sugar so we watch his diet and exercise and he has avoided medication,
ReplyDeleteThat does sound good.
ReplyDeleteI love grilled veges Kay so you have inspired me to do some tonight. I agree you are healthy.
