Grilled Veggies

I've often shown how I like to serve grilled vegetables at our family pot lucks.  I learned how to do this when we were visiting friends, Chris and Lorraine in Ohio.

All you do is wash and slice whatever veggies you like.  I often use red peppers, asparagus, zucchini, sweet onions, mushrooms and broccoli.  I marinate it in olive oil with Italian seasoning for about an hour.

I then broil it on the top rack of my oven.

After it's done, I often sprinkle it with a little Parmesan cheese.

Something about the high heat is supposed to sweeten the flavor of the veggies and it really does.

This is yummy and healthy.  I highly recommend this!

  4. Yummy! I love to grill or oven grill veggies. I often do asparagus with red pepper slices with jalapeno salt or onion powder! Ummmm, I'm hungry.

  5. When people talk of grilled veggies I jump up. The way you have been doing would make the even crispy and tastier. Thank you.

  6. John and I love grilled veggies too! I usually make a small aluminum foil boat, add the veggies, spray with a little olive oil, sea salt and ground black pepper and place on the grill. They are so good!

  10. I love grilled veggies, too. And another favorite: potatoes and butternut squash cut into chunks, sprinkled with a little olive oil and seasoning, and baked. Yummy.

  11. Asparagus? :)
hahahahahahah, yummy, but what do you do with the odd smell of #1 after you've had a lot of asparagus?

We do something similar as yours, except we're too lazy to get all those separate veggies and prep them; we just get the medley at costco (frozen large bag of baby carrots, broccoli, cauliflower, zuccini and squash all cut up and mixed), then just throw them in a pan with tons of garlic and olive oil. No asparagus in those frozen medlies, though, I suspect too expensive.

never thought of using italian dressing with it, will have to remember to try that.

My daughter does something very similar on the outdoor grill. It leaves toasted marks, but I like that. For some reason, the process makes the vegetables less bland in taste and more delicious.
