Although we do occasionally cheat once in a while and eat things that aren't the best for us, I was noticing what mom prepared the other night.
We had some kabocha squash which is quite sweet and healthy, grilled zucchini and sweet onions with Italian seasoning that I prepared, kinpira gobo (burdock root), stir fried pak choy greens, tofu and fried saba (mackerel). OK, I know. Fried fish isn't the best thing but mom says she's using canola oil.
I forgot to put some kabocha on my plate. The brown rice is not true brown rice, but some kind of in between type called Genjimai.
The wine is half wine and half carbonated water using our Sodastream.
All in all, lots of fiber and pretty nutritious, I think.

ReplyDeleteI guess mackerel is used as food for the seals at the zoos. Right? The Japanese eat a lot of it. It's got a lot of good fish oil in it.
DeleteThe menu is so varied. That alone has to be healthier than meat-potato-vegetable. And you know it was prepared with love.

Then the fact that she is cooking several dishes AND that they are healthy dishes too! (I vote with Aunty that fried fish is healthy because it was cooked in Canola oil. :-)) Holly

DeleteMy neighbor made kabocha squash soup, a new and excellent taste treat for me. The kabocha was in chunks so it was a hearty soup. Fish trumps fried. So Mom's meal was all good. I'm a bit puzzled about what sweet onions are. Like Maui onions? Cooked onions lose their acrid taste and are usually quite tasty.
ReplyDeleteSweet onions are like Vidalias and Maui onions. Maui onions are more expensive though. They are very, very sweet. I especially like them in meat loaf or anywhere I need raw onions.
DeleteLooks good to me. I love fish, and I love zucchini. The sweetest onions I've ever had are from Washington State. Their season is quite short and people on both sides of the border go crazy trying to get their share of them. They're called "Walla Walla Onions" after the Washington town of Walla Walla. We do go for great place-names in the Pacific Northwest, especially BC and Washington.
ReplyDeleteI recently bought a bag of mixed rices and quinoa, and the mixture has a nice, nutty flavor. Lindy loves it, and so do I, and Dick will eat it if it's put in front of him. I had some left over and spread it out on a plate, with cheese grated over it, then zapped it for a short time in the microwave. Dick loved it that way. LOL
Well, Lindy is making funny noises, so I'd better investigate.

DeleteBy the way, I could have sworn I've seen Walla Walla onions. It was either at the commissary in Illinois or in Hawaii. I'll keep a look out. Mom uses sweet onions especially for her pickled cucumbers (namasu).

ReplyDeleteIt all looks so good and very exotic to me. We are trying more healthy dishes but are not 100 percent 'good'. We have started our journey so to speak.
