I'm not much of a cook or baker. Art has always been the one most comfortable in the kitchen. I need my recipes precise down to 1/8 of a teaspoon.
Our lemons have been ripening by the bagfuls lately and then we also received a lot of tasty avocados from our neighbor, Wini. She also brought us some chocolate chip cookies with coconuts in them.
Well... that got me thinking about baking something. December seems to be the month full of baking and sweets, none of which is good for me, of course.
Then I ran across a lemon bar recipe that I found in the newspaper a long, long time ago.
Art on the other hand found his avocado pie recipe on a Rachel Ray website and then modified it to suit his inclinations. Mom said both our offerings were delicious. What? Did you think she'd actually tell us she liked one better than the other?
Art used two of those huge, round purple avocados for his recipe and a huge Hawaiian Meyer lemon too.
It was beautiful and very tasty. He makes his own crusts too.
People have told me his mom was the best baker in Honokaa.
Whenever I've tried recipes from online or newspaper, it was pretty darn lousy. I don't want to admit how many wonderful sounding dishes I've had to toss.
It was with more than a little trepidation that I decided to give this recipe called Luscious Lemon Bars a try.
It was written by some ladies called Three Many Cooks.

Here it is:
Crust:
1 cup all-purpose flour
1/8 teaspoon salt
½ cup confectioner’s sugar
1 stick (8 Tbs) butter, melted but not hot
Filling:
2 large eggs
¾ cups sugar
1 ½ Tbs. all-purpose flour
6 Tbs. juice from 2 lemons
2 tsps. Finely grated lemon zest
Adjust oven rack to lower-middle position and heat oven to 325 degrees. Spray an 8 inch x 8 inch baking pan with vegetable spray. Fit an 8 inch x 16 inch piece of heavy duty foil across pan bottom and up the 2 sides as foil over hangs to pull bars from the pan. Spray foil with vegetable cooking spray.
Mix flour, salt, confectioner’s sugar in a medium bowl; stir in butter to form dough. Press dough into pan bottom (the bottom of a measuring cup dipped in flour helps). Bake until pale golden, about 20 minutes.
While pastry bakes, whisk eggs, sugar, flour, lemon juice and zest in a medium bowl.
Remove pan from oven. Add lemon mixture and continue to bake until just set, about 20 minutes longer; let cook in pan for a few minutes and then using foil handles, pull bars from pan and set on a wire rack. Cool until room temperature. Cut into squares and serve.
Yield: 16 bars (143 calories per bar)
My lemon bars were not quite as super sweet or tart as some I've tasted, but I was very pleased with it. Between Art's pie and my bars, we managed to use quite a few of the lemons. We even used the skin of the lemons for zest. That was fun!
We shared our treats with our neighbors so we didn't ingest too many calories. That way we were all happy!

Once again...I regret not living next door!
ReplyDeleteI'd have to taste it, but I can't imagine I would like a lemon-avacado pie. Looks very artful, however. Dianne
ReplyDeleteWill you be hosting all of your blog followers to try these????? Please?? :)
ReplyDeleteWouldn't that be a LOT of fun?
DeleteThey both look outstanding, I can see why your mom would like them both equally! Never had avocado pie.
ReplyDeleteI never heard of avocado pie! It looks delicious, and so do those lemon bars, Kay. Yum!
ReplyDeleteI was dubious when he said he was going to make it too.
Deletebeautiful! I make those bars too!!! I have never heard of a pie like that but it sounds luscious!!!!
ReplyDeleteDoes KC realize that most grandparents are not as talented as you two?
ReplyDeleteThose lemons are HUGE, and I didn't know avocados came in "round," instead of oval.
It all looks yummy! Bet the bars taste different with regular lemons instead of the Meyers.
Mahalo for sharing.

Actually many grandparents are far more talented that we are, but you are kind to say so. Thank you, my friend. The bars are actually a milder, less tart flavor than the usual bars I've had before.
Deleteyou might try baking with splenda to use less sugar-looks delicious!
ReplyDeleteYou know that I am sitting here grinning.
ReplyDeleteSomething else we have in common, my husband is better in the kitchen than I am!
ReplyDeleteI totally understand about being happy with your lemon bars (which look delicious, by the way.)
Whenever I have made something that is really and truly awful, my sweet husband won't tell me so, he will just say, "Oh, it's not too bad, but I don't think you should make it again." HA!
Art's pie looks incredible. I bet it was tasty too!
I LOVE this! I just told Art and he laughed out loud. That's very similar to what he would say.
DeleteI love avocado, but I have never had them in a pie! It looks good and so do your lemon squares.
ReplyDeleteI love lemon bars but never think to make them. Wish you were my neighbor.
ReplyDeleteBut good gosh, Delaine, you make everything else. Art would like to be your neighbor when you make your fruitcakes.
DeleteHe makes his own crusts too.
ReplyDeleteThe man is a genius.
But then, so are you, for lining your pan with foil.
Sharing the goodies is genius, too.
looks yummy
ReplyDeleteLemon bars I love, but I have never heard of avacado pie. I've having trouble imagining it. but it does look wonderful and the crust looks professional. Good job, both of you.
ReplyDeleteTom helped me with fussy Christmas cookies today. We do much of the cookie baking together.
It's really fun to bake together, isn't it?
DeleteI've never heard of using avocado in a pie before. Was it a sweet or savoury pie? Your lemon tart sounds delicious. Have you thought of squeezing the lemon juice and freezing it in ice cube trays if you have a surplus?
ReplyDeleteOh yes! I have heard of that and have done so. I've also grated lemon zest and frozen that as well. The avocado pie is more sweet than anything else, but not that sweet. Art thought he might have added too much lemon, but I didn't think so.
DeleteI haven't made a recipe like this in ages. It looks delicious, thanks Kay!
ReplyDeleteI wish I had had someone to teach me to cook and bake. Can I be Art's apprentice in your kitchen?
ReplyDeleteChocolate chip cookies with coconut? Sounds great.
Never saw a round avocado before.
i can cook and bake. i don't LOVE to cook but i do love to bake!!
ReplyDeleteperhaps you could freeze the juice and zest from the lemons for use at a later date!!
You've cookied up a storm!
