Whenever Art does his Meals on Wheels on Fridays he listens to NPR (National Public Radio). He loves the science programs.
He came home the other day and told me we needed to have egg salad sandwiches for lunch because he wanted to try out something he learned on NPR. A scientist had given a talk about how to cook eggs. He said fresh eggs are best fried. Older eggs should be steamed.
I've always boiled my eggs and then doused them in water with ice cubes. Most of the time the egg shells separate more or less OK, but not always. Apparently this scientist said steaming the eggs for 12 minutes is the best method so we tried it.
And guess what? By golly! It works!!! The shells came off easily! Wow! I'm still blown away. Have you ever tried steaming your eggs? (I did also dunk the eggs in cold water after I steamed them.)

I just boil my eggs, drain the water and wash it for a min with tap water. It peels, just fine for most of the times. Will, try your way :)

ReplyDeleteDavid uses an egg cooker that he purchased online. It takes less than 5 minutes to cook eggs. Poached eggs, omelets, and boiled.

ReplyDeleteInteresting, very interesting! I used to love hard boiled eggs when I was a kid. My mother would tap tap tap around the equator of the egg, cut it in half and I would eat each half with a spoon in an egg cup. Maybe I need to start eating eggs again. Maybe I'll get a chicken to lay eggs for me! Thanks for the lesson.

For egg salad the eggs have to be done right. this method sounds like it really works.
ReplyDeleteBringing eggs to a boil and then letting them sit in the boiling water on low for ten minutes is my usual way. That works well for older eggs. this would be a great way to cook very fresh eggs.

ReplyDeleteI'm boiling eggs the way I learned from Japanese television show...place 4-5 eggs(I use cold eggs out of refrigerator) in the bottom of small pan with lid. Pour about 1/4 cup of water and put lid on and cook egg on medium-low heat for 6-7 minutes. remove from heat and wait about 6-7 minutes 'do not remove lid'. Rinse in cold running water for 1 minutes and voila! I think this is like steaming egg. And sometime it cracks but... I would like to try this method. You two are really nice couple!
