One of Our Typical Dinners

After we retired while living in Illinois we began leaning toward making lunch our big meal of the day and having a lighter dinner with fruits, salad or whatever.

Now that we're living in Hawaii, we've adapted to mom's eating schedule. She likes dinner to be the main meal at 5:00 on the dot so that's what we do.

Because she wears dentures, food has to be soft so most of our meals don't have a whole lot of crunch to it.


Mom cooks 75% of the time. For this meal we shared the duty. Mom makes miso soup for almost every dinner. Here she added daikon (Japanese radish) and wakame (seaweed). There was left over coleslaw she made on the previous day along with some multigrain rice that was left over from lunch. We all love the rather strong flavor of ume (pickled plum) and it's supposed to be healthy for you. We avoid the ones with ajinomoto (msg) or chemicals.

I steamed the beet leaves and served it with a little bit of mayo. We'll have the boiled beets tomorrow. Art prepared sardines and sweet onions with teriyaki seasoning and roasted some Okinawan sweet purple potatoes. Mom loves Art's sardine and onion dish! We also had some cranberry juice mixed with carbonated water from our Sodastream machine.

Dessert was Bing cherries. I was totally stuffed, but not uncomfortably so.

Mom says she's going to make nishime (Japanese stew) tomorrow. And that is Art's favorite dish!

  3. That is a very Japanese meal and it looks tasty.

    I tend to cook haole cuisine. Yesterday, I baked a spinach quiche, and tonight, I will make Chicken with Pasta Shells.
    Variety is the spice of life.

  4. Except the sardines, I could sit right down and eat You certainly have a variety of dishes with your dinner. Our dinner last night was bacon/lettuce/tomato sandwiches and cantaloupe for dessert. We seldom have more than three items for dinner.

  5. We too seldom have more than three things for dinner. Last night, we ate at Costco. LOL Tonight a chicken casserole and a salad. Perhaps a beet salad with goat cheese and a dash of balsamic vinegar.

  9. That is certainly not a typical Vermont localvore meal. I had eggplant lasagna with tomato, spinach and mushrooms and an ear of fresh corn, all prepared by me. My son will cook dinner tomorrow night. He will venture farther away and serve salmon.

  10. I have noticed how Japanese meals have so many little dishes with lots of flavors.
    Tonight we are having lots of vegetable from our garden: beets and beet greens, baked parmesan zucchini rounds, sliced tomatoes, carrot and cucumber sticks. Tom will have a broiled boneless pork chop and I will have cottage cheese with my tomatoes. I tend to cut down on meat when I am trying to lose weight. Our typical dinner is some kind of meat or chicken or fish, a starch, a cooked vegetable and a fresh salad or fruit. And I do all of the cooking. Tom cleans up.

  14. Japanese food is my favorite. Do you ever cook with the shiso herb? I'm growing some now.

    1. I don't use shiso, but mom does. She sometimes puts it in namasu and always with sashimi.
