Muffin Tops for Art

I actually don't eat a lot of baked goods. It's not good for me since I am diabetic. However, Art  loves having a blueberry muffin with his breakfast and mom has one as a morning snack after working in her garden. We do also occasionally share some with a friend, neighbor or relative. I always double the recipe. I figure if I'm going to go through the trouble of making it, I might as well make it worth my while. The recipe I use is King Arthur's Famous Department Store Blueberry Muffins

I can't say it's necessarily healthy. I've read that muffins are not a healthy option for breakfast, but at least I know what's going into it. The problem with store bought muffins are that they are huge and full of fat, etc. etc.

My muffins are smaller (probably half the size of most store bought).

Now comes the tricky part. Art decided he liked a crispy muffin top so he toasts his muffins in the toaster oven. He'd then eat the bottom and save the top to eat like a cookie. πŸ˜„


He asked me to try and keep the blueberries off the top of the muffin batter. He would always select the muffins that had the least amount of blueberries at the top when I made them.

Well, blueberries have a tendency to keep poking through the top. 


So then it occurred to me that I should just keep a bit of the batter on the side before I mixed in the blueberries. 

Then I would put the blueberry batter into the muffin cups and add the NON-blueberry batter over the ones that Art would keep for himself.

OK... Some blueberries still managed to poke through, but it was good enough.

I did have these three rejects.

I think they were sugar chips that didn't dissolve (I think). 

Whatever the case, Art says he will sacrifice himself and eat those anyway.

  1. I’ve heard of many who love muffin tops but not toasted and certainly not without fruit. I have always assumed that the reason people love muffin tops is because they have MORE fruit and crispy edges for texture.

  2. Toasted muffin tops sound like the next big thing (remember those croissant donuts a couple years ago)? Anyway, Art is sounding a little too fussy here I'm just glad he still eats those yummy looking rejects! πŸ˜„

  4. Oh Art is a truly noble soul! I use a bread recipe from the King Arthur collection as well. I love it because I can make up the dough, take off 1/3 of it, and then refrigerate the rest of it. Every day, I pull out the bread dough and tear off a knob of it and let it raise. Fresh baked bread every day!

  9. Kay, I used a lot of King Arthur products also. I think they may also make a 'muffin top' only pan... if not, I know I've seen one somewhere. And since you like blueberry muffins, we do too... but I freeze my blueberries before putting them in the mix - that way they don't turn the batter blue (which is not really a problem, but still...). And let me tell you, frozen blueberries are really good for snacking!

  10. I love muffin tops whereas I'm not as crazy about muffins themselves. I think it's because of the texture. The stalk is like bland cake. However, I wouldn't waste the rest of the muffin and would eat it ALL. :)

  12. So Art likes blueberry muffins, but not in the tops, which he likes toasted. About that time I was thinking he was being pretty darn demanding, but then I remembered what a great guy he is and how much he does for you and Mom, so I guess getting muffins his way is OK. :-)

  19. Interesting, I love blueberries, the more the merrier. I bake my own too. They are healthier, we do the best we can :-). When the kids were home I left nuts out of a few muffins cuz I'm allergic to a lot of them, especially walnuts but fortunately they aren't. Home baked is the best. :-)

  20. I'm diabetic too so I don't eat a lot of baked goods these days either. I am planning on buying some almond flour and trying to make some low carb versions. Maybe, lol
