Mutated Beetroot

I've mentioned before that it's a toss up between the beetroot or the leaves that we like best on a beet plant.


We were at the Open (Farmer's) Market last week and I was thrilled to find a beet plant with a lot of leaves. When we got home, I discovered why this was so.

One of the beet roots had two leaf tops!
Awesome!


Mom was quite thrilled because she loves the steamed beet tops.

As I was boiling the beetroot, Art once again insisted that his mother was able to peel the skin off the beet after boiling or steaming.

I tried, but it didn't work on the first two.

"Well," he said, "My mom was able to do it very easily."

Humph!

So I googled it.

Ummm...

OK, it said I was supposed to put the beetroots into cold water after boiling it so I put the other two into cold water and doggone it! The skin came right off.

I was waiting for the "I told you so," but he wisely avoided saying it.

The beets were wonderful! I can't wait to buy more.

  2. It never occurred to me to peel beets before cooking because my mom always boiled and plunged into cold water and those jackets just came right off. My mom was Ukrainian so I imagine she grew up eating lots of beets. I hated them as a child but I love them now.

  7. I love beets but had never thought about eating/steaming the beet tops.... Bet your Mom loved that treat --just for her.... We don't have beets much anymore --but my Mom had them quite a lot when I was young.... So delicious --but I just like the beets and NOT pickled beets...

  8. I love beets! They skin easily, too, if you roast them, but the blanching works best, I think!

  12. I like my beets peeled and sliced and drizzled with olive oil and salt and pepper and then roasted in the oven. I later add some fennel seed when putting into a salad.

  17. Yup. Beet skins slip right off well cooked beets.
    They are good roasted too, but then you do have to peel them first.
    Loved the two-top beet.
